Just make sure they list a detailed syllabus so you know what material will be covered, and ask to make sure that there will be regular interaction with and feedback from your instructors. Also there are some magickal/occult Orders that offer classes via correspondence. If you are interested in Hermetic Ceremonialism (which includes astral work) you may wish to check out The Esoteric Order of the Golden Dawn - http://www.esotericgoldendawn.com, among others.
